4 medium sized onions, sliced
2 tbl spn good olive oil
2 tbl spn snipped sage or marjoram
freshly ground peppercorns and salt for seasoning
4 slices hot buttered toast
250g good strong cheddar cheese, grated
Gently cook the onions in oil, do not allowed to brown. When cooked add the herb of your choice, season and mix well. Spread the mixture on the hot toast and sprinkle on the cheese. Place under a hot grill until the cheese melts. ( if you are a fan of mustard spread the toast with a good French mustard before spreading on the onion mixture.
