700g courgettes, sliced
t tbsp salt
225g onion, chopped
3 garlic cloves, chopped
350g brown sugar
900ml red wine vinegar
1tbsp coriander seeds, 3 tbsp brown mustard seeds
1 tbsp fresh root ginger, peeled and chopped
2 dried chillies
Mix courgettes, 1 tbsp salt and leave to drain in colander overnight. Rinse and pat dry.
Put courgettes in pan with onion, garlic, salt, sugar and vinegar. Bring to boil and simmer for 15 mins until sugar dissolved and vegetables soft.
Add raisins, coriander and mustard seeds, ginger and chillies. Mix and simmer for another 35 mins or until thick, stirring frequently.
Cool and put into clean, warm jars.
