6 red onions, peeled & finely chopped
4 tbsp olive oil
4 tbsp cider vinegar
4 tbsp red wine
2 level tbsp dark brown sugar
Sauté the onions in the oil for 15-20 minutes until soft, add vinegar, wine and sugar – increase heat until bubbling then lower to simmer cover 7 cook gently for 10 minutes then cook uncovered for 20 minutes or until thickened. Add seasoning to taste and cool.
